"A top-tier sushi restaurant was required to file a FDA seafood HACCP plan for importing fresh seafood as a primary processor. We developed the HACCP plan, aligned with 21 CFR 123 (the seafood HACCP regulation), for importation, and developed a plan for IQF parasite destruction aligned with the NYC Health Code. We harmonized the two systems, satisfied the FDA and earned an ‘A’ letter grade on the restaurant’s follow-up DOH inspection."
